Sandy's Fried Rice (Sandy Ward)
Ingredients
1kg cooked rice
4 rashes of Bacon diced
2 Onions diced
2 Carrots diced small
2 red Capsicums
½ cup Peas
½ cup Beans 
2 Celery sticks diced
¼ cup Soy Sauce
3 egg Omelette diced
5 Spring Onions diced
Discription

Fry all together in pan or wok with a bit of oil add Salt & Pepper
Add rice and mix well
Add omelette and Spring Onions

Pumpkin Scones   (Judy James)

1 tabs butter
½ cup sugar  OR  ¼ cup Fruitsana
1 egg
2 cups cold mashed pumpkin
2 cups SR flour

Cream butter and sugar using electric beater.  Add egg and beat.  
Stir in mashed pumpkin.  
Add sifted flour and mix well.  
Put in tabs heaps on a greased tray.  Makes about 12 (cut in half = 24)
Bake in hot 220C oven about 10-15 mins.  
Can be served by cutting in half and spreading with butter;  or jam and cream.

Popeye (Mario Cavallaro)

Normally my recipes are closely guarded secrets but in view of the fact that we have emerged from the closet the recipe follows.


Take a slice of bread and butter both sides.
Take a not too large glass and utilising a circular motion remove the center.
Place the slice onto a moderately hot BBQ plate.
Crack an egg and gently place the contents into the center of the bread being careful not to break the yolk as this will cause it to become a "poke in the eye".
The butter on the upper surface of the bread will melt and give the popeye maximum flavour.
Take the utmost care not to burn the toast As this is referred to as a "black eye".
Do not allow the egg to run under the bread as this will result in "conjunctivitis" and so ruin the recipe.
When cooked to perfection gently remove bread and attached egg and place in proffered plate.
Garnish with rash's of bacon and grilled tomato's and sausages [optional]
Seasoning should be left to the consumer.

Tracie's Sweet Potato Salad
Packet baby spinach leaves
One sweet potato cut into cubes 
Danish Fetta chopped
Roma tomatoes cut in half
Red Onion sliced
Snap peas cut in half
Black Olives sliced
Toasted slivered nuts to sprinkle on top
Dressing:  
Pour into a jug: Olive oil, red wine vinegar, balsamic dressing, American mustard, whole-grain mustard, squeeze lemon juice, salt and pepper - give a good shake.
(If too vinergary add oil if too oily add vinegar.)
Cut sweet potato into cubes and lightly spray with olive oil, bake until nice and soft.
Let cool
Arrange baby spinach leaves on plate and put on sliced onion, sweet potato, tomatoes, fetta,olives and snap peas.
Just before serving add the toasted nuts and  the salad dressing.
